2 cups kale, finely shredded
1 can (15oz) artichokes, drained and chopped
1/3 cup green onions, chopped
1/3 cup red bell pepper, diced
2 cups siggi’s Plain 0% Skyr
1/2 cup parmesan cheese, shredded
1/4 cup olive oil
3 cloves garlic, finely minced
2 Tbs fresh lemon juice
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp pepper
In a large bowl, combine the kale, artichoke hearts, green onion and red bell peppers.
In a separate bowl, combine the yogurt, parmesan cheese, olive oil, lemon juice, garlic, salt, paprika, and pepper.
Mix well then combine with the kale mixture. Season with a bit more salt and pepper if needed.
Let sit in the refrigerator about about 4 hours to let the flavors combine.
Enjoy with crackers and vegetables.
