Whole Roasted Cauliflower

1 Tbs vegetable oil
1 head cauliflower, whole with stem and leaves removed
1 1/2 cup siggi’s plain 0% Skyr
1 lime, zested and juiced
1 Tbs cumin
1 Tbs garlic powder
2 Tbs chili powder
1 Tbs curry powder
2 tsp salt
1 tsp ground black pepper
Preheat the oven to 400°F (200 °C). Lightly grease a small baking sheet with a bit of vegetable oil.
In a large mixing bowl, combine the yogurt, lime zest, lime juice, chili powder, cumin, curry powder, garlic powder, salt and pepper. Mix well.
Dunk the entire head of cauliflower into the bowl. make sure it’s well coated.
Set right side up on the prepared baking sheet. Roast in the oven until the surface is lightly browned. About 30-40 minutes. The marinade will create a lovely crust on the cauliflower.
Let the cauliflower cool for about 10-15 minutes then cut into wedges to serve.
