1 1/2 cup old-fashioned rolled oats
1/3 cup sliced almonds
1/4 cup dried currants (can also use dried cherries or cranberries)
1 tsp fresh thyme leaves
2 tsp sea salt
1/8 cup honey
1 Tbs pure maple syrup
Preheat the oven to 350°F. Line a large baking sheet with parchment paper and set aside.
In a medium bowl, combine the oats, almonds, currants, thyme and sea salt.
In a separate bowl, combine the honey and maple syrup and whisk until smooth. Add this mixture slowly to the oat mixture and mix until well coated and combined.
Spread the oats out onto a the prepared baking sheet in one even layer.
Bake for about 15-20 minutes, stirring the oats occasionally so that they bake evenly.
Remove from the oven and allow the granola to cool to room temperature.
