1 cup siggi’s Plain 0% Skyr
2 tsp seasoned rice wine vinegar
1/2 of a larger seedless cucumber, peeled and chopped into tiny dices
6 mint leave, chopped finely
salt to taste
1 tsp extra virgin olive oil
In a bowl, combine all the ingredients but the olive oil. Stir well. Slowly whisk in the olive oil.
Enjoy as a cool condiment to spicy foods.
